Soda Fountain Cupcakes: 2 Delightful Flavors and the Easiest Recipe..EVER!

This post is about birthdays.
It is about cupcakes...really good cupcakes.
The recipe is really easy.
Trust me...don't skip it!


My birthday was a few weeks ago, but I was doing a cleanse detox and I was determined to stick to it -  seriously I cannot say no to cake - so on the actual day we had berries! My kids thought I was C-R-A-Z-Y! They were also a bit disappointed...they really wanted to make me my birthday dessert. So I promised them that after I finished the detox, they would get their chance to create a special dessert for me.

With my husband not working right now, we are also teaching the kids big lessons about how simple gestures can go a long way and about the value of their money and how to get value from their money (following me?). With this in mind, we told them they needed to spend their money on their creations.

OK, I admit...that even though I told the kids this was all about them... I had some ideas of my own...so I did guide them in creating these amazing Soda Fountain Cupcakes! The flavors remind my of an old fashioned soda fountain. (I would love to open one in my town! 


So...my kids got to baking! I heavily suggested to the kids that they use the 7UP and Sunkist to make the cake - they looked at me like I was C-R-A-Z-Y (again)...but they are always up for a little fun in the kitchen. It was science and baking combined...they LOVED it!


I was totally intrigued by the fact
that we could bake without the eggs
or oil or water...
Just add the SODA to the cake mix and stir!
That's it! Seriously!



The results of this experiment...
I honestly have to say the fluffiest, lightest cupcakes I have ever had.
Each flavor had a great color -
soft pink and creamy orange, and a subtle hint of the soda flavor.
If you have never tried to bake with soda...you should.
It was also super easy for my kids to bake 2 batches of these to celebrate the festivities!


 Now for the recipes!
 ___________________________________
Cherry 7Up Cupcakes
  • 1 Box Betty Crocker Cake Mix, French Vanilla
  • 16 oz Cherry 7Up (Diet or regular)
  • Cupcake liners
  • Cupcake pan
  • Decor as you desire
  1. Empty the contents of the Betty Crocker Cake mix into a medium/large bowl (you can also use your mixer). Add 16 oz (2 cups) of soda (Cherry 7Up), and mix well.. (It was super cool to watch the reaction...the mix fluffed up and looked like a cloud!)
  2. Place liners in a cupcake pan and fill each cup 2/3 full.
  3. Bake at 350F for about 18 minutes (according to my oven).
  4. Let cool.

Sunkist Cream Cupcakes 
  • 1 Box Betty Crocker Cake Mix, White
  • 16 oz. Sunkist Orange Soda (Diet or Regular)
  • Cupcake liners
  • Cupcake pan
  • Decor as you desire


  1. Empty the contents of the Betty Crocker Cake mix into a medium/large bowl (you can also use your mixer). Add 16 oz (2 cups) of soda (Sunkist), and mix well. 
  2. (It was super cool to watch the reaction...the mix fluffed up and looked like a cloud!)
  3. Place liners in a cupcake pan and fill each cup 2/3 full.
  4. Bake at 350F for about 18 minutes (according to my oven) 
  5. Let cool.

Fluffy White Vanilla Frosting
  • 1  Container Betty Crocker Whipped Fluffy White Frosting
  • 2 teaspoons vanilla extract (I add my homemade vanilla to everything!)
  • Mix to combine thoroughly.
  • Let the cupcakes cool and then frost. 
    FROSTING TIP: Place the frosting in a zipper bag (at least a quart, but a gallon size is better). Push the frosting to one corner and clip that corner off (about 1/4-1/2"). 
    Begin in the center of the cupcake and move in a fluid motion circling outwards.
I am a BAD "froster" and these look pretty darn cute!



Decorate with sanding sugar, sprinkles, or candy to impress your birthday girl or boy!

Of course you can't forget the candles when it is a birthday celebration!
We always used Betty Crocker Rainbow Candles...and I know growing up in my house it was always a big treat to lick the frosting off the candle!
